Professor Escobar joined the full-time faculty at Montgomery College in the Fall of 2003, after more than ten years of teaching as an adjunct. She currently teaches nutrition courses at the college and serves as Nutrition Coordinator of the Hospitality Management Department. She also participates in a variety of programs offered through the Marriott Hospitality Center.
Prior to joining Montgomery College full-time, Professor Escobar worked as a nutritionist for the U.S. Department of Agriculture's Center for Nutrition Policy and Promotion. In that position, she worked on nutrition research and education projects related to the Dietary Guidelines for Americans and the Food Guide Pyramid.
